- Prepare the Chickpeas: Begin by draining your tinned chickpeas thoroughly. Rinse them under cold running water until no more foam appears. The crucial step here is to dry them as much as humanly possible. I like to spread them out on a clean tea towel or several layers of kitchen paper and gently pat them dry, even rolling them around. You want them to feel almost completely dry to the touch; this is key to achieving that ultimate crispiness.
- Season the Chickpeas: In a medium-sized mixing bowl, add the thoroughly dried chickpeas. Drizzle over the olive oil, ensuring each chickpea gets a light coating. Then, sprinkle in the smoked paprika, ground cumin, garlic powder, onion powder, cayenne pepper (if using), sea salt, and black pepper. Toss everything together really well with your hands or a spoon until the chickpeas are evenly coated in the oil and spices. They should look beautifully reddish-orange and fragrant, ready for their air fryer journey.
- Preheat Your Air Fryer: If your air fryer has a preheat function, set it to 190°C (375°F) and let it preheat for about 3-5 minutes. A preheated air fryer helps achieve an even crisp and prevents the chickpeas from steaming.
- First Air Frying Stage: Carefully transfer the seasoned chickpeas into the air fryer basket. Spread them out in a single layer as much as possible. Avoid overcrowding, as this will prevent them from getting truly crispy. You might need to cook them in two batches, depending on the size of your air fryer. Set the timer for 10 minutes.
- Shake and Continue Frying: After the first 10 minutes, gently pull out the air fryer basket. Give it a good shake to redistribute the chickpeas, ensuring all sides get exposure to the hot air. You should notice them starting to lightly brown and feel firmer. Place the basket back into the air fryer and cook for another 8-12 minutes, shaking the basket every 4-5 minutes.
- Achieve Ultimate Crispiness: Keep a close eye on them during the final minutes. The chickpeas are done when they are deeply golden brown, have a wonderfully crunchy texture, and you can hear a distinct rattling sound as you shake the basket. They will look smaller and feel much harder. Once they've reached your desired level of crispness, carefully remove them from the air fryer.
