Ingredients
Method
- Prepare the Chicken: If using raw chicken, dice it into small, even pieces. Heat 1 tablespoon of olive oil in a large frying pan over a medium heat. Add the chicken and cook, stirring occasionally, until it turns opaque and develops a light golden hue, signaling it's cooked through to an internal temperature of 74°C (165°F). You'll hear a gentle sizzle as it cooks. Remove from the pan and set aside to cool slightly if you haven't pre-cooked it.
- Toast the Bread: While the chicken cools, toast your sourdough bread. You can use a toaster, grill, or a dry frying pan. Aim for a beautiful golden-brown crust and a satisfying crispness when you tap it – it should make a hollow sound. This usually takes about 2-3 minutes per side on a medium heat in a pan or under a grill.
- Mix the Cottage Cheese Base: In a medium mixing bowl, combine the cottage cheese, cooked chicken, finely diced red onion, smoked paprika, garlic powder, and a pinch of red chilli flakes if you're using them. Season generously with salt and freshly ground black pepper. Stir everything together until the spices are evenly distributed and the mixture has a uniform, creamy consistency with specks of seasoning.
- Fold in Fresh Vegetables and Herbs: Add the quartered cherry tomatoes, diced cucumber, chopped chives, and chopped dill to the cottage cheese mixture. Gently fold them in until just combined. You want the vegetables to retain their fresh appearance and crispness, so avoid overmixing. The aroma of fresh herbs will start to develop wonderfully here.
- Assemble the Toast: Carefully spread a generous amount of the loaded cottage cheese mixture onto each slice of golden-brown toast. Pile it high, ensuring you get a good mix of all the ingredients in every scoop.
- Garnish and Serve: Arrange a handful of fresh rocket or baby spinach leaves alongside or on top of each toast. Drizzle lightly with a little extra virgin olive oil for a glossy finish and a touch of richness. If you like, serve with a lemon wedge on the side for a bright, zesty squeeze over the top just before eating. The vibrant colours of the toppings against the golden toast will be visually appealing.
Notes
For an even quicker meal, use pre-cooked chicken breast. Adjust the amount of red chilli flakes to your preferred spice level. Freshly ground black pepper makes a big difference in flavor.
