Ingredients
  

  • 600 g boneless skinless chicken breasts or thighs, cut into 2.5cm cubes
  • 2 large bell peppers one red, one yellow, deseeded and cut into 2.5cm pieces
  • 1 medium red onion roughly chopped
  • 200 g sweetcorn fresh, frozen, or drained canned
  • 400 g can black beans rinsed and drained
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chilli powder adjust to your heat preference
  • ¼ teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lime for serving
  • Fresh coriander chopped (for garnish)
  • Optional: Avocado slices or a dollop of soured cream for serving

Method
 

  1. Preheat and Prepare: Begin by preheating your oven to 200°C (180°C fan/Gas Mark 6).   3. Add Vegetables: To the same bowl, add the chopped bell peppers and red onion, along with the remaining tablespoon of olive oil. Toss everything together gently until the vegetables are lightly coated and glossy, mingling with the chicken and absorbing some of those aromatic spices.
  4. Arrange on Baking Tray: Spread the seasoned chicken and vegetables evenly in a single layer across your prepared baking tray. Ensure there’s a little space between the pieces; this allows for proper roasting rather than steaming, which is key to achieving that lovely caramelisation. The tray should look colourful and inviting, a promise of the vibrant meal to come.
  5. First Bake: Place the tray into the preheated oven and bake for 20 minutes.
