Ingredients
  

  • 100 ml approx. 1/2 cup good quality coconut cream (full-fat for best results)
  • 50 ml approx. 1/4 cup fresh lime juice (from 2-3 limes)
  • 30 ml approx. 2 tbsp simple syrup (see tip below for making your own)
  • 500 ml approx. 2 cups clear fizzy drink (e.g., lemonade or sparkling water)
  • Ice cubes plenty
  • Lime slices or wedges for garnish
  • Toasted coconut flakes for garnish (optional)

Method
 

  1. Prepare the Coconut-Lime Mixture: In a small jug or bowl, combine the thick, creamy coconut cream with the freshly squeezed lime juice and simple syrup. Whisk them together until the mixture is smooth and appears uniformly pale, with no streaks of individual ingredients. The scent of lime and coconut should be wonderfully fragrant.
  2. Chill Your Glasses: Fill two to four tall glasses generously with ice cubes. The colder the glass and ice, the longer your dirty soda will stay wonderfully fizzy and chilled.
  3. Add the Coconut-Lime Base: Divide the prepared coconut-lime mixture evenly among the ice-filled glasses. You should see the creamy white mixture settling at the bottom, creating a distinct layer.
  4. Pour in the Fizzy Drink: Slowly pour your chosen clear fizzy drink over the back of a spoon into each glass. This gentle pouring technique helps to keep the layers distinct initially, preventing immediate mixing. Listen for the gentle sizzle as the soda meets the ice, and watch the clear liquid gently settle above the creamy base.
  5. Observe the Transformation: As you pour, you'll notice the creamy white coconut layer beginning to swirl upwards slightly, creating beautiful, cloud-like patterns against the clear fizzy drink. This is where the 'dirty' visual comes from, and it looks quite mesmerising.
  6. Garnish and Serve: Add a fresh lime slice or wedge to the rim of each glass for a burst of vibrant green and an extra hint of citrus aroma. If you fancy, sprinkle a few toasted coconut flakes over the top for added texture and a lovely nutty fragrance. Serve immediately and stir gently before sipping to combine the delightful flavours.
